GHEE RICE
Ghee Rice Using Prime Crop’s Jeerakashala Rice
Instructions:
Wash and Soak Rice:
Rinse Prime Crop’s Jeerakashala Rice under running water until the water runs clear. Soak the rice in water for 20-30 minutes, then drain and set aside.
Fry Garnishes:
Heat 1 tablespoon of ghee in a large pot or pan. Add cashews and raisins, and sauté until golden brown. Remove and set aside for garnishing.


Sauté Onions and Spices:
In the same pan, add the remaining ghee. Add cinnamon, cloves, cardamom, bay leaf, and fennel seeds. Let them sizzle for a few seconds until fragrant.
Add the sliced onions and green chilies. Sauté until the onions turn golden brown.
Add Rice:
Reduce the heat and gently add the soaked and drained Jeerakashala Rice. Stir carefully to coat the rice with ghee and spices for about 2-3 minutes.
Cook Rice:
Add 4 cups of water and salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight lid and let the rice cook for 10-12 minutes or until the water is absorbed and the rice is fully cooked.
Steam and Fluff:
Turn off the heat and let the rice sit covered for 10 minutes to allow it to steam. Gently fluff the rice with a fork to separate the grains.
Garnish and Serve:
Transfer the ghee rice to a serving dish. Garnish with fried cashews, raisins, and a sprinkle of fresh coriander and mint leaves.
Serving Suggestion:
Pair this aromatic ghee rice with spicy chicken curry, mutton korma, or vegetable stew for a complete and delicious meal!
