PULAO USING PRIME CROP’S KALIJEERA RICE

Instructions:

  1. Cook the Kalijeera Rice:
    • Heat 1 tablespoon of ghee or oil in a pot.
    • Add the soaked Kalijeera Rice and sauté lightly for 1-2 minutes.
    • Add 3 cups of water and 1/2 teaspoon of salt. Bring it to a boil, cover, and cook on low heat until the rice is soft and fluffy. Turn off the heat and set aside.
  2. Prepare the Masala Base:
    • Heat 2 tablespoons of ghee or oil in a large pan. Add cumin seeds, cloves, cardamom, cinnamon, and bay leaf. Sauté for a few seconds until fragrant.
    • Add the sliced onions and green chilies. Cook until the onions turn golden brown.
    • Stir in the chopped tomatoes and cook until soft and mushy.
  3. Cook the Vegetables:
    • Add the mixed vegetables, turmeric powder, garam masala, and salt. Sauté for 3-4 minutes.
  • Sprinkle a few tablespoons of water, cover, and cook until the vegetables are tender.
  1. Assemble the Pulao:
    • Gently fold the cooked Kalijeera Rice into the vegetable masala. Mix carefully to avoid breaking the delicate rice grains.
    • Add cashews and raisins if using. Cook on low heat for 2-3 minutes to let the flavors blend.
  2. Garnish and Serve:
    • Garnish with chopped coriander leaves and fried onions if desired.
    • Serve hot with raita, pickle, or a side of curry.
